All you Cali peeps know what I’m talkin’ about, but for those who don’t, Palace Station’s Oyster Bar is one of those MUST.HIT.EATS with every visit to Las Vegas. 

Located in the farthest casino at the South end of the strip, it’s totally out of the way but worth the extra mileage just to get there. Sink your teeth into some of the freshest seafood to come outta the West Coast since the El Nino disaster and we hit the jackpot motherload. The casino itself is old, dingy, and reeks of burnt cigarettes and aged musk but once you turn the corner to feast your eyes on this teensy little 18-seater bar, you’re instantly mesmerized by the site of fresh shucked oysters, creole Cajun seasoning wafting through that smokey polluted air, and of course the rows of gleaming stainless steel cookers that serve up single servings of ecstasy faster than you can say UNCE! Here’s what’s on the menu today y’all: 

Palace Pan Roast (above): Fresh shrimp, crab, chicken, and andouille sausage sauteed with brandy, cream, and tomato served with fresh linquine pasta. The Oyster's Bar's claim-to-fame. You CANNOT leave this joint without sampling one of the 5 different pan roast combos. Total down-home comfort food that easily serves 2 in this heaping bowl. The broth is lobster-based, and as some of you know, I am highly allergic to lobster so truth is, I've been missing out on what this REALLY tastes like, but every single one of my friends can attest that this is the *ISH! Peeps wait hours in line for this meal so I'm convinced: the lobster don't lie, man. 

 

Chef at the boilers' helm...See those individual stainless steel cookers? They serve up all the house favorites in a snap! Every dish is made fresh to order and best of all? You can indicate your level of spiciness on a scale of 1-10 (I'm a solid 6) and add fresh habaneros if ya nasty! 


Top: Manhattan Clam Chowder, Bottom: New England Clam Chowder I lovelovelove soup. I can eat soup morning, noon, and night. Bonus points if it's tomato-based. Extra extra bonus points if it's creamy clam based and loaded with fresh boiled potatoes. New England Clam Chowder, in all it's caloric splendor is such a treat for the waistline, I hardly ever order this unless I'm totally on vacation mode. Which I was, so this was my ever-so-delightful cheat meal. Ahhhhh, I can smell the salty sea air from here. Superb!

 

New on the menu: Dungeness crab cakes topped with french fried crispy potatoes in a creamy lemon reduction. I've never been a fan of crab cakes since most joints load it up with bread crumbs and wasted carbs. These palm-sized chunks of crab meat leave nothing to the imagination. What you see is what you get: 100% crab, 200% flavor.


Cioppino fish stew prepared with shrimp, crab, cod, mussels, and clams. The ONLY broth-based stew on the menu that's NOT simmered in lobster. Which translates to the ONLY dish I get to savor from the myriad of etouffees, jambalayas, bouillabaisses, and pan roasts. I'd KILL the joint for all I'm missing, but this cioppino is so expertly seasoned and stewed, I crave it in my culinary dreams. Except in my dreams I'm dressed as a lobster catching fish and shucking oysters with my bare claws. Oh Freud, What do you think it means??!!!

*Insider’s tip: The Oyster Bar is first come, first served, open 24/7 so there is ALWAYS a wait. They prepare everything fresh to order even allowing you to select your level of spiciness based on a 1-10 scale. I’m pretty lightweight so I always pick a “6” and drench my broths in their buffet of Louisiana hot sauces. I’m also allergic to lobster and since they slice and dice that sucker to marinate in EVERY single one of their soup bases, the cioppino is the only thing I’ve savored from their multitude of pan-roasted faves. But TRUST when I tell ya the Pan-roast combo is TO.DIE.FOR. My peeps swear on it and so does their 4.5 star yelp rating
